Stuffed Peppers (The Don Style)

BEHOLD! The first recipe. This is pretty simple to get going, the only long part is the peppers in the oven. 😦 But the prep is pretty simple.

Ingredient List:

Mariana Sauce:

  • 2 Cans of Tomatoes
  • Extra Virgin Olive Oil (A fair amount)
  • 7 Garlic Cloves
  • Sprig of Basil
  • Chilli Powder
  • Oregano
  • Salt and Pepper to taste.

Cooking time: 15 mins

Stuffed Peppers:

  • 9 Peppers
  • 1 packet of Ainsley Harriot’s Cous Cous (Or make your own).
  • 500g of Lean mince
  • 1 pack of Mozzarella

Cooking time: 60 mins

Add any veggies you want to build up the weight of the dish. Especially if you’re a monster and could eat 6 of these peppers in one go.

NOTES:

  • I didn’t make enough sauce to pour over the top of the veggies post cooking. I’ve added another can of tomatoes to compensate for this.
  • Add a few breasts of chicken to have with your veggies and this should be a full 5 days of meals, discounting snacks of course. But they’re easy enough, nuts and fruit. BOOM!

Fishing for Dinner – Brighton Pier

IMG_0009Well…. Today started off very interesting. After finishing an assignment I thought hey, “I could do with some sunlight” So off we went fishing for dinner. Managed to pick up a fishing rod during the summer for £30, came with a reel, spool of line and a good amount of Mackerel hooks. BARGIN! Turns out that mackerel season ends in September around my neck of the woods, was lucky to come across “Nala” and old comedian fella who thought he was super funny, he was to be fair and sorted me out with some lugworms for bait. Alan, (Nala backwards) also helped show me the ropes with what I’m catching, when to fish and what to use… Alan was a cool guy. 😀 Managed to catch ourselves 11 Whiting fish :/ I had no idea what the hell they were to be honest, but turns out they make a nice fish pie.

A little history on Whiting (The Fish):
There are a bunch of difference species, including pacific, Japanese and English including the King George, sand and red spot Whiting. Obviously we all know the benefits of fish as a source of protein but why people choose between the differences is down to taste. With the prices of Cod, Haddock and other such fishes. People are now willing to eat others in greater amount. Whiting isn’t a bad tasting fish, pretty bang on actually but to Cod, Salmon and others; the preference lays with them.

  • Protein – 16.8g
  • Carbohydrate – 0g
  • Total Fat – 1.2g
    • Total Omega-3 fatty acids – 254mg
    • Total Omega-6 fatty acids – 18.4mg

Some additional noteworthy mentions:

  • Vitamin B12 – 35% RDA
    • One of the helpful beauties helps keep nerves and blood cells heathy, helping to make DNA too. B12 also prevents a type of anaemia that makes you weak and depressed… Not cool. (Skerrett, 2013)
  • Selenium – 42% RDA
    • A beautiful little bugger involved with helping out metabolism function… Apparently (WebMD, 2016) Also, there seems to be some evidence linked to reduced risk of Type 2 Diabetes although this review study by Rayman, (2012) could shed some better light there.

Once home, the real business started. I think it’s a good point to add here that catching fish is great fun, unhooking them is a little bit weird if you actually care about living things; but gutting a fish… Gutting a fish is no joke, ELEVEN FISH was literally a life changing moment. After realising I cannot fillet a fish we opted on gutting them and cooking them whole as to not waste any meat.

I need to just add here, that wasting meat that I’ve caught and killed is not to be trifled with, unless you’re a hillbilly halfwit with no care about life. This was HARD to do!

Anyhow, we came to the decision that it would be best to bake/grill the fish, and froze the rest for another day. Had a great day out with the family, Indie had a laugh and it felt really good earning our dinner bear grills style. Well… Almost Bear Grills. We never could with a carved stick, and ate raw.

Message from me to you: Have you seen Avatar….? Think about this living thing when you chose to take it from its. kill it, home, take its insides out (while it stares into yours CONSTANTLY) and appreciate what nutriment it has given you. That sounds so hippy and fluffy but I don’t care. It’s important!!! I learned that today.
